I did a little search and didn't seem to find this so I'm posting for future reference. I got this from Welcome to Beer-Wine.com

Rubber Stoppers

#2 beer/wine bottle - fits 1/2" dia. T 21mm B 17mm L 26mm
#3 - 4/5 bottles or quarts - fits 3/4" dia.T 24mm B 19mm L 25mm
#5-1/2 for headpack caps - fits 1" dia. T 28mm B24mm L24mm
#6.5 Universal -bored or solid fits 2.8, 3, 5, 6, & 6.5 gallon carboys - fits 1" to 1-3/16 dia. T 37mm B 29mm L 37mm
#6 - gallon jugs - fits 1" dia. T 32mm B 27mm L 25mm
#6-1/2 - 5 gallon carboys - fits 1-1/16" dia. T 34mm B 28mm L 25mm
#7 - 5, 6, & 6 1/2 carboys- fits 1-3/16"dia. T 37mm B 31mm L 24mm
#7-1/2 - wide mouth juice gallons - fits 1-1/4" dia T 39mm B 31mm L 26mm

If this is 100% accurate, this is wiki-worthy. I've screwed up and ordered the wrong size stopped before.

I know this is a super old thread, but do you know if the #2 fits both 26mm cap bottles and 29mm cap bottles (i.e. many European 750 ml bottles)?
