I've been impressed with honey malt in hoppy ales in the past, so I'm gonna forgo my standard pale ale adjunct (Victory) and go with honey and a couple crystals. Hopping is cascade-centric, with some other similar varieties thrown in. Mash hopping turned out well on my DoW IIPA, so I'm going that direction again.

Dayum, looks good to me! I don't see a reason the change anything. Only thing I'd do is dry hop with some Cascade, Columbus, Simcoe or all three combined.
 
Mmmmm, honey malt is tasty. I'm not a big fan of Chinooks as a bittering hop or otherwise, but that's just my personal preference. You should dry hop that bad boy with a couple of ounces though. The recipe looks good to me. Brew on!

+1 on the Chinook and entire recipe - looks tasty. Wish I was brewing instead of sitting in an office today. :mad:

Sheet man, no it don't :D

I am leaving woyk oily two. I plan on brewing tonight, haven't decided if imma brew my Oktoberfest or the Wit. What'yall think?
 
That recipe looks good, but I'm cheap and look for ways to get the most out of everything.
You could probably cut your 1 min addition in half and save it for Dry Hopping if you steep the last addition after the wort cools to about 180. Check out my Fat Owl Pale Ale in my recipes. It is a slight variation of the once commercially available Sharks Tooth Pale Ale(94-98)
 
In your recipe..it calculated 1oz on cascade at 13 and 17 IBU...how does wort hopping do that.? I dont understand

I made an IIPA with the white labs Burton Ale, which has notes of clover honey. Came out pretty good. I'm totally using Honey Malt in my next IPA now. Thanks for the idea! Otherwise the recipe looks great.

Used to be you posted you we're using more than half a pound of honey malt and you'd be lynched and your beer proclaimed undrinkable.;)

It sounds like it'll be on the sweet side for how I like my IPAs, but I know lots of people like them that way and it should have enough bitterness. Hell, with all those hops - I'm not sure you'd even be able to pick out a half-pound.
 
Sounds like a good recipe except I would:

Cut out the Cascade...mail to me.

Cut out the Chinook...mail to me.

Cut out the Columbus...mail to me.

The Simcoe looks just fine.
