I'm brewing a series of one-gallon batches of beer, and I'm using dry yeast. Since a package of yeast is enough for 5 gallons, I've just dumped somewhere around half a package or less into a one-gallon batch.

I folded the pouch with the remaining yeast several times, put it in a zip-lock bag and threw it back in the fridge. How long do you think it will last in there? I may not be able to brew another batch until next weekend.

When it's sitting in there for 5 or 6 months....get another package.....5 or 6 days....look for something else to worry about.

Lots of people around here will tell you to use the whole package...even for 1 gallon.

I do what you've described, and it always comes out fine.
