I toasted my own grains and came up with an equal to Brown Malt. To showcase that grain the most i came up with this recipe.

9.00 lb Pale Malt, Maris Otter (3.0 SRM) Grain 81.82 %
2.00 lb Brown Malt (65.0 SRM) Grain 18.18 %
1.00 oz Williamette [4.80 %] (60 min) Hops 16.2 IBU
1.00 oz Williamette [4.80 %] (15 min) Hops 8.0 IBU
1.00 items Whirlfloc Tablet (Boil 10.0 min) Misc
1 Pkgs SafBrew Ale (DCL Yeast #S-33) Yeast-Ale
Or
1 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

I'm not sure how much fermentables are left after toasting. Would a full two pounds of brown malt leave you pretty far on the malty side? I love brown ales and love to use safale -04 in them.
 
There's plenty of stuff left after browning. The enzymes are dead, but there's plenty left for the excess enzymes in the Maris Otter to get at. That's why brown malt ships with a gravity contribution computed.
