question about doubling one gallon fruit wine recipe....

so I have some very basic, backwoods style, fruit wine recipes. They are written for one gallon batches, and call for one yeast packet.

if I want to double, triple, or even quadruple these recipes, should I multiply the amount of yeast, or just all the other ingredients? From what I understand, one packet of yeast is enough for up to five gallons....Am I right? Example recipe below:

3 pounds strawberries
2.5 pounds sugar
1 Campden tablet
1 package wine yeast
1 teaspoon yeast nutrient
1.5 cups orange juice
1 teaspoon citric acid
1/2 teaspoon grape tannin

???
