help with AG brown honey ale recipe

All right, I'm planning up a AG brown ale recipe. I don't really have the equipment to do AG, but I figure I can do 7 lb of grain, and supplement in some honey - so really, I suppose this is a PM brew.

if I do 7 lb pale 2 row + maybe 2 lb of honey, would that give me a alcohol of 4-6%?

I'm thinking the recipe looks like:

7 lb pale 2 row
.5 lb crystal
.5 lb cara-pils (for head retention)
.5 lb (something else for brown / nutty - suggestions? roasted barley?)

2 lb clover honey
1lb dextrose - sweeten it(?)

1.5 +/- oz hops - suggestions for this type?

nottingham ale yeast (dry)
