After reading Kai's site, one of the keys that he mentions is obtaining complete conversion. I do an iodine test and get around 75% consistently which is acceptable to me doing a one step infusion. However, I am wondering if I can tweak my process and obtain better results by mashing thicker at 140F for let's say 30 minutes and then boosting by infusing water to 158F to get to about 2 quarts per pound (I prefer 2q per pound) for another 30 minutes.

Reading Palmer last night, it seems that this may convert the mash a bit better and it may also boost efficiency. Thoughts?
