I'm sure it's neither the first nor last, but here's my attempt to savor this hop combo in a big way.

I'll be pitching on top of a yeast cake of Pacman.

I haven't made a beer above 50ish IBUs before, but I'd like to try. Any thoughts?
 
Sounds good. I'd personally shoot for 70-80 IBUs with a 1.075 beer. I just brewed Dude's Lakewalk pale ale, and that is an awesome hop combo. Good luck!
 
If you're gonna use 1/2# honey malt I would cut the crystal in half unless you like your IPA's on the sweeter/maltier side...

Thanks. I'll consider doing that. I've never used honey malt before.

Was hoping to get some of that sweetness to balance the hops, but I'm not looking for anything overly cloying, either.
 
Just thinking out loud, I have some odds and ends crystal malt that I should use up on a paler beer. How about this grain bill:

14 lb Golden Promise
.5 lb Flaked Barley
.5 lb Honey Malt
.5 lb Crystal 20L
.25 lb Crystal 60L

Could also scratch the 60L entirely and just go with the 20L. I wonder if that is enough with the honey and flaked barley to stand up to the IBUs. I'm shooting for a paler color with this beer.
 
Late additions are great for this hop combo. I recently scored a 44/50 on my amarillo/simcoe IPA at a BJCP sanctioned event. I used MO but GP is a great choice too.
