I've heard mentions of wheat brews not needing much time in secondary, due to the fact that they don't need to be clarified. How much truth to this is there? I made a Wheat Doppelbock, trying to loosely emulate Aventinus, and it spent 2 weeks in primary (had to go get married and do the honeymoon thing :D ). I racked it to secondary on Sunday, and I'm curious: how long should it spend there? It's a bit of a beast, 8.5-9% ABV. Thoughts?

It's true that most wheat beers don't need to clarify. But a dopplebock having that much alcohol will need some time to mellow out, same thing on the bottles. I'd say one month in the secondary and a month and a half in bottles or more.

Scheiße! Well, maybe I'll have some to drink by thanksgiving. Maybe. Hey Baron, was yours lagered? Or an actual Aventinus cloned ale?
