I've heard mentions of wheat brews not needing much time in secondary, due to the fact that they don't need to be clarified. How much truth to this is there? I made a Wheat Doppelbock, trying to loosely emulate Aventinus, and it spent 2 weeks in primary (had to go get married and do the honeymoon thing ). I racked it to secondary on Sunday, and I'm curious: how long should it spend there? It's a bit of a beast, 8.5-9% ABV. Thoughts?
