Are these best young, like traditional wheat beers? I usually drink my hefes starting at 3 weeks, would the same apply?
 
yes, i think it would. unless you're brewing it at a higher ABV which would do better with age.
 
+2, On that note, DeathBrewer has some great variations on DunkelWeizens. Just make sure that if you want to prime with more sugar to use strong bottles :eek:

That makes me wonder...I just brewed a saisson, turned out to be close to 7% abv, I started drinking it yesterday (3 weeks from pitch). Does this need more time before I really drink it?

It tasted pretty good, not amazing, still very spicy which I know is to style, and actually a little more citrus like than I expected.
