I did a haus pale ale yesterday
https://www.homebrewtalk.com/f66/bee-cave-brewery-haus-pale-ale-31793/
I was suposse to get 1.051 and got 1.059 !!! I putted this in beersmith whic says 85.59 % effiency. Is this right?? To let you know what I didnt put the cover when I did my boil, but only get 18.5 liter at the final instead 21.5 liter ( 4.89 Gallons instead 5.5)
Was it correct or i should cover it next time?

Edit : Reel effiency when i ajust the fermenter volume is 75.98. Better to cover it or not?

Don't cover when you boil. You want to drive off DMS precursors to avoid DMS off flavors.

You need to know your boil off rate and adjust the starting volume accordingly--if you want 5.5 gallons going into the fermenter, then you want more than that at the start of 60 minutes..

Your og is higher because you have a lower volume. If you add water to bring it back up to 5.5 gal then your OG will be closer to the target you were going for. Or you can have .61 gallon less beer and have a bit higher abv.
