I am brewing a Ginger Saison on Friday and my recipe calls for crystalized Ginger. Do u think this is something that my lhbs will have? If not, where can I get it? If I decide to use fresh Ginger root, does anyone have clue what an oz of crystal would transfer to in fresh Ginger?
 
I made one of these. You can get it at whole foods shops.

I followed all the rules of saisons and ended up with a very dry beer. Be careful of using too much sugar. I used Wyeast 3711, and I suggest avoiding the sugar altogether if you use this yeast.
 
It calls for 1 lb of cane sugar and I was thinking of using WLP568, seems to have good results.
