WLP001 or danstar windsor ale yeast

I have received one of my Christmas gifts early, the kit below.

The kit came with one 11g packet of danstar windsor ale yeast. I looked up the yeast and found some people on here complaining that it finishes too high leaving the beer sweet. For this beer should I use the packet that came with the kit or should I dump the beer on top of a WLP001 cake from an IPA? I will be adding the bourbon so do I need the sweetness from the dry yeast to balance out the flavors? Or would I be better off using WLP001 trub from another batch?

You could always pitch the danstar and see what happens. If it finishes way to high, then pitch other yeast to finish the job. If it gets you down to your target FG, then cool.
