What would you consider a good final gravity for a 1.104 sg?

I would say around 1.026 would give you a good balanced beer. A quad is not supposed to be overly dry but nicely balanced with a good malt backbone
 
You didn't take any of the yeast cake with you when you racked, did you?

A "good" final gravity is the one you hit once there's nothing left the yeast can ferment. The usual prescription is to take gravity readings three days apart to make sure it's not still dropping, but that may not hold true if you've racked the beer off most of the yeast.

How long was it in primary before you had to transfer?
 
1.020 is decent, 79% attenuation. Leave it for a few days and confirm it's not still dropping...
