Wheat beer always gives me heartburn, so I make a small batch Saison that doesn't use any. Basically, it's a Pilsner with different yeast. My wife, who hates beer, would even drink this (her words, not mine). This is a beer I make while doing other stuff, like cleaning or answering work email.
Grain:
3lb 2-row (US) 76.9%
0.65 lb Munich 20L 16.7%
.25 lb table sugar 6.4%
Mash for 60 minutes at 148 degrees
Hops:
.5 oz Saaz 60 minutes
.2 oz Saaz 10 minutes
.25 tsp Irish moss 10 minutes
Belle Saison yeast
One week in primary (I use a LBK), one week in secondary (I use glass carboys), bottle with orange blossom honey and cellar for 30 days. Comes out to about 6% and easy drinking. For hops lovers, you can add an extra .1 oz Saaz at 5 minutes or flameout.
