So brewing the 8-8-8 RIS on 8/3 (I worked on 8/8), I decided to let it sit in secondary for 3 months before bottling. I'm planning on bottling Saturday but I've been wondering why the airlock is still bubbling once in a while after almost 3 months in secondary. Pushed some air out of the better bottle to get the water on the other side of the S-type airlock or whatever it's called, and now a few hours later it's almost pushed completely to the other side. Primary was 7 days at ~70 degrees, SG was 1.084 (sh*tty efficiency from sparging issues) FG of 1.018 at transfer. Is this just the trub/yeast compacting and releasing CO2 in the process? I'm just a little confused, I put an american stout in secondary 3 weeks ago and the airlock hasn't budged. Any ideas? Thanks.
