Has anyone tried using 1 or 2 packs of So4 for the DFH 90 min clone?? The recipe calls out for WLP1099 (Whitbread) yeast. I believe the S-04 is the same. I think the OG is 1.089 so I'd probably go with 1.5 or 2 packs.

1099 is a Wyeast product, not a White Labs product (WLP).
S-04 may attenuate a little better than the 68 - 72% that Wyeast states for 1099 but it should be fairly close. I would rehydrate 2 packets and pitch.
But then again, I love S-04.
