I'm thinking of making a small batch of hard cider, and I would like to use cider from a local orchard. But I see that a lot of people here use apple juice as opposed to apple cider and that Apfelwein can be finished fairly quickly without tedious racking. Does the same hold true for filtered cider, or will it be a longer process? What are the differences between using cider and applejuice in general.
