Changes made on the recommendation of my LHBS:
reduced Caravienne from 8oz to 4 oz
reduced Crystal Malt from 1lb to 8oz
removed 8oz of raw barley
also changed from 11lbs of DME to 11lbs of LME
LHBS thought these changes would lessen the sweetness of the beer. The change from DME to LME has me concerned, do I really need 11lbs of LME?

Also, should both hops be boiled for 60 minutes?

thanks,

If you're trying to brew to style, your OG is way over guidelines. Did you need 11lbs of DME? For anything that calls itself "stout," I like to see some roasted barley.

American Stout, to me, is exemplified in Rogue Shakespeare (and to a lesser extent, Elysian Dragonstooth). If you're going for that kind of beer, some C-hops as late additions would be welcome. Fuggles @60 are likely to become kinda lost.

Appreciate the reply 944. I made a few adjustments, basically back to the original recipe and fixed the boil time for the Fuggles. I guess it is really closer to an Imperial Stout than an American Stout.

11 lbs Pale Malt Extract (8.0 SRM) Dry Extract 80.00 % (will be using LME)
1 lbs Caramel/Crystal Malt - 60L (60.0 SRM) Grain 7.27 %

8.0 oz Caravienne Malt (22.0 SRM) Grain 3.64 %
8.0 oz Chocolate Malt (350.0 SRM) Grain 3.64 %
4.0 oz Black (Patent) Malt (500.0 SRM) Grain 1.82 %
2.75 oz Galena [13.00 %] (60 min) Hops 49.3 IBU
2.00 oz Fuggles [4.50 %] (2 min) Hops 1.0 IBU
1 Pkgs California Ale (White Labs #WLP001) Yeast-Ale

thanks again,
