If I used a corny for my secondary would it be ok to hook up the CO2 after a week or so and dispense from it or would it be better to rack to another corny so the beer clears up more?

You could do it either way. If you don't use a second corny, leave it in the primary longer. You probably won't get the clarity you'd get if you moved it a second time, but with some beers, it doesn't really matter.

Carbonated is not conditioned!

If you go from the fermenter to cornies, plan on waiting 4-5 weeks before tapping.
