I know that the Bavarian Wheat DME has a higher proportion of Wheat to Barley in the mix. I'm planning on just getting a few 50 pound bags of DME, both regular pale as well as Wheat, and the only wheat I'm seeing at Northern Brewer is Bavarian (as far as what's available in 50 pound bags.)

Would it be possible to just add in 5% standard Pale Malt DME to balance out the extract for making a more "American Style" wheat, or is there more to it than that?

That's all I do. I just made a Blue Moon-style beer and I wanted the wheat/barley mix to be 55/45. The wheat LME I buy is 65% wheat so I just substituted enough pale LME to bring the wheat portion down to 55%.
