I am brewing a SNPA clone recipe this weekend, but made some changes due to hops availability and want to use DME instead of LME. I wanted to get some feedback from the group first!

8 oz caramel malt 30 lovibond
6 oz carapils malt
6 lbs DME light (using instead of 6 lbs. LME light), will do late extract add as well
1.5 oz Perle leaf hops 7.2% for 60 mins (instead of 1.5 oz Perle 8.2%)
2.5 oz Centennial pellet hops 9.5%: 1 oz for 15 mins, 1 oz. for 5 mins and 0.5 oz. for dry hopping (instead of Cascade 5.4% 2.5 oz.) - should I cut this back?
Safale US-05 (instead of 1056)

I like hoppy beer so if I end up with an extra hoppy SNPA that's okay. Thanks for the input!

Might want to up your grain bill a bit. I use 1# Crystal 60L in my recipe. My first try at this was real close to SNPA but I've modified my original recipe and it's currently in primary so I don't know the results yet. Your hops are a little different from mine but I don't have a problem getting Cascade yet. I'm thinking this might become a SNPA IPA! Maybe go with a full oz for dry hopping as that I don't think AA% really has an effect on dry hopping. The yeast is a good one! I'm trying S-04 for my current batch since my LHBS was out of S-05. The 04 blew the lid off my fermenter! But I would up the grain bill;)

MY .2c worth
Bood luck, Good brewing!

Thanks Brewmando. I have a total of 14 oz of grain (8 oz caramel 30 and 6 oz carapils)...isn't that enough? Should I cut back the hops?

Here's my SNPA clone - take it for what you will. It's AG, but basically just sub out the base-malt pale grain for liquid/dry extract. I'd keep steeping grains the same or similar. This hits SNPA in about all the right key statistical areas (color, IBU, gravity, etc):

Recipe Specifications
--------------------------
Batch Size: 5.00 gal
Boil Size: 6.20 gal
Estimated OG: 1.054 SG
Estimated Color: 7.6 SRM
Estimated IBU: 37.5 IBU
Brewhouse Efficiency: 75.00 %
Boil Time: 60 Minutes

Ingredients:
------------
Amount Item Type % or IBU
9.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 90.00 %
0.50 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain 5.00 %
0.25 lb Cara-Pils/Dextrine (2.0 SRM) Grain 2.50 %
0.25 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 2.50 %
0.33 oz Magnum [14.00 %] (60 min) Hops 16.5 IBU
0.33 oz Pearle [8.00 %] (45 min) Hops 8.7 IBU
0.50 oz Cascade [5.50 %] (20 min) Hops 6.0 IBU
0.50 oz Cascade [5.50 %] (10 min) Hops 3.6 IBU
0.50 oz Cascade [5.50 %] (5 min) Hops 2.0 IBU
1.00 oz Cascade [5.50 %] (1 min) Hops 0.8 IBU
1 Pkgs SafAle American Ale (DCL Yeast #S-05) Yeast-Ale

So, I ran your ingredients into Beersmith for you and tweaked it a bit. This should get you close to SNPA:

Recipe Specifications
--------------------------
Batch Size: 5.00 gal
Boil Size: 6.20 gal
Estimated OG: 1.056 SG
Estimated Color: 9.2 SRM
Estimated IBU: 37.6 IBU
Brewhouse Efficiency: - %
Boil Time: 60 Minutes

Ingredients:
------------
Amount Item Type % or IBU
6.25 lb Light Dry Extract (8.0 SRM) Dry Extract 87.72 %
0.50 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain 7.02 %
0.38 lb Cara-Pils/Dextrine (2.0 SRM) Grain 5.26 %
1.00 oz Pearle [7.20 %] (45 min) Hops 23.4 IBU
0.50 oz Centennial [9.50 %] (15 min) Hops 8.3 IBU
0.50 oz Centennial [9.50 %] (7 min) Hops 4.5 IBU
0.50 oz Centennial [9.50 %] (2 min) Hops 1.4 IBU
1 Pkgs SafAle American Ale (DCL Yeast #S-05) Yeast-Ale

1.00 oz Centennial [9.50 %] (Dry Hop 7 days) Hops -

NOTE: With your hopping schedule at 1.5oz 60, and more centennial (1oz versus .5 at 15, etc.) - the beer would be much more bitter (57.7IBU versus the 37.7 in the above recipe). I know you said you don't mind that, but SNPA is near-perfect the way it is... Why change a good thing?! :) To me a 1.055OG beer with close to 60 IBU is a little out of balance, but thats just me. I'd at least drop another 1lb or so of DME into the recipe if I was going to go for 60IBU...

Yeah...

Keep your ratio of OG to IBU gravity at about 1.4 to 1.

SNPA has an IBU of 37 and a gravity of 1.053. (53 / 37 = 1.4)

Doing a 60-IBU over a 55 gravity, you're not going to get the malt profile to come through.

I know you said that you have a selected choice of hops, but if you can you should use cascade. SNPA is known for cascade hops. . In my SNPA clone I used Chinook and NB for bittering and cascade for flavor/aroma/dry hopping.

Also...dryhopping isn't affected(pretty sure) by AA %. It is just for aroma, so the total oz is what matters, not the AAU.

The nose of SNPA is a cascade bomb. I'd like to know their dryhop schedule. :rockin:
