Over the last couple days I've been getting more and more interested in Apfelwein- hard not to with the emphatic responses it gets here- and I want to make a batch. I just got done reading the sticky here about yeast, and I noticed that the yeast I'm using- WLP002- is one of the "sorta" recommended yeasts. I was just going to use an extra envelope of muntons I have laying around, but if this WLP002 would work better, can I use it, or would it not be worth the trouble?

I didn't bother filtering out the hops when I put this stout into the fermenter, so there's a lot of crap in there. I'm not expecting to be able to just dump some apple juice and sugar onto the yeast cake here. If I followed the "yeast washing" process, would I be able to get something usable?
