Had a great brew day today. My first one in a couple months and my second AG. Only a couple issues came up:

1. It's a saison currently without any sugar added. I ended up mashing way higher than I hoped. 151 instead of 147. I was hoping this would be fairly dry. Should I add a little sugar once the yeast gets going? Will that dry it out or just jack the ABV?

2. I forgot to add the seaweed stuf...can't remember it's proper name... Anyway, is there anyway to rectify that now or will it just be a little cloudy?
 
1. How high is the OG? Adding sugar will add ABV but will also thin it out a little.

2. Irish moss, you 're fine without it. Time will clear you beer.
