Weizenbock Fermentation Questions

I brewed a Weizenbock with an OG of 1.08 and pitched with Wyeast 3056 at 65F
After fermentation took off I brought it down to 62F and it has now almost fully floculated after 6 days. I have now brought the temp back up to 65F to let the yeast finish up.
Here's my question: after i get consistent hydro readings showing that fermentation is complete, presumably 2 weeks or so from now, should I just go ahead and bottle or do what some people on this forum recommend and cold condition for a few months?
If so, what temp should I condition it at, how long should I condition before bottling and should I dose with a fresh packet of yeast?
