I was wondering if anyone has experimented with aging wine with different wood. I want to experiment with white birch, but dont know if anyone has tried?
I haven't made wine (only brew beer) but they say the Honeycomb Barrel Alternative from Black Swan works well for beer, wine, and spirits. I've used it a couple times and I've really enjoyed the results. They do extract flavors quickly, so I always start pulling samples around day 10 or 12.
