I usualy do the set it and forget it method but I was out of beer and couldn't wait. So I attached my co2 to the beer out, side of the keg and cranked up the pressure to 30psi. And then forgot about it. 2 days later, way over carbed. I reduced the psi to about 2psi. What elese can I do to decarb the beer?
 
Pull the release, then let it sit for a day.

Test the beer, and repeat as needed.

To speed the process, set the keg out of the kegerator and let it warm up.
 
Vent the gas. Remember, carbonation is just an equilibrium of the gas in the beer, and the gas in the headspace. If you pull the release valve, it will force the gas in the headspace out. Then, to get back to equilibrium, the beer will off some it's gas into the headspace, thus making the beer less carbed. You will have to do this a few times, but it is very easy to do.
