I was mentioning to a friend over a beer the other night that I am going to start cutting my water with distilled and adding brewing salts.

He said - "why don't you collect the water from your dehumidifier?"

It sounded so simple I was left speechless... Can it be that simple?? Is there anything preventing me from collecting the water from my new dehumidifier and using it in my mash???

If I fed it by hose from my dehumidifier to a sealed container with an airlock it might stay fairly clean... it will get boiled too in the end...

I'd be concerned with what the condensation coils are made of and what they are soldered with. Wouldn't want to leach harmful metals into your brewing water.
