I have ingredients for a weissbier that I was planning to brew for an Oktoberfest party. I have two batches of my modified version of Biermuncher's OktoberFAST that are almost ready to go, but my wife also suggested a wheat beer.

The problem is I brewed so many hefeweizens this summer for a few BBQs and a wedding, that I'm kind of tired of them. I'd much rather brew a dunkelweizen, which I personally prefer, and sort of is a better fit for the Fall.

I'm going through my leftover grains, and I'm thinking of trying the following recipe out. I was wondering if I could get some opinions.

Leftover Dunkelweizen (minimash)

Fermentables
6.3lbs Wheat LME
1lb Vienna Malt
.5lb Munich Malt 20L
.5lb Special B
.25lb Honey Malt

Hops
1oz Tettnang (4.6 AAU) @ 60 min

Yeast
WLP300

OG: 1.054
IBU:12.1
SRM: 15
