Greetings
so I recently put a ball valve on my
bayou classic 15 gallon pot. Slowly
turning her into a HLT. I bought a
thermo sight and I can't decide if
I should put it above valve (would that
be too much "dead space" below it) or
kind of level with valve (would that
put thermometer to close to flame).
Any advice would be greatly appreciated.

Watch out for false readings caused by the heat from the flame. I got around this by using a small coffee can as a heat deflector

This is the basic challenge of combo units. I too would advise you to mount it as low as possible for the sightglass sake but also add a simple heat shield to protect the tubing and the thermometer.
