In percentages, how fermentable is honey? I've heard that it's around 80 percent, but that would mean that one pint of honey per gallon would give an ABV of 10 percent, and that seems high.

1 pint=0.125 gal
(0.125gal)(0.80)=0.10
(0.10)/(1 gal)=0.10
(0.10)(%100)=%10 ABV
 
You are mixing volumes and weights and ignoring the simple fact that half of the sugar becomes CO2. A pint of honey weights more than a pint of water. It's about 1.5 pounds. Figure those in and you're around 5-6%.
 
Are you saying that the value of 80 percent that I used should have been for weight and not volume?
