I'm making a Belgian Dark Strong, which calls for 1 lb. corn sugar with 10 mins. left in the boil.

I'm thinking of using straight sugar instead. Would that work? Or, should I cook up the table sugar into candi syrup.

Sure it will work just fine.

I like Turbinado sugar also in my Belgians. Slightly different flavor.
