Here's my next batch. Something like a Double Bastard. We're doing 15 gallons and my mash tun holds about 33 #'s of grain, thus the DME.
I cut back on the crystal and added sugar to compensate for the DME which I believe is 20% C-Pils. I'm using Munich to give me a malty backbone without using a lot of Crystal.
I still may have too much (thoughts). I will probably mash at 150 °F for 75 minutes or so. Wish I had some more Chinook!

Wow. I am curious about a few things. Why so much munich? 9 lbs seems like alot...Have you used chinook for aroma before? I have been using it as more of a bittering hop, is that off base?

You oughta save some yeast and start culturing. Trust your sanitation.

I made an IPA a few months back with 30% Vienna and it was fantastic. Gonna give some Munich a try. Might cut it back to 12-15% however.
I love me some Chinook. Bitter, flavor, aroma or dry hop I love me some Chinook!
Don't know what you mean about the yeast. I make starters all the time. I just whipped up this recipe a few days ago and don't have the desire (nor the time) to deal with ranching some up...

Oh. I assumed you were out of the loop on yeast starters. Eliminating the three bags of yeast is the first place I would look to economize. Not having the desire never crossed my mind.
 
Post up a picture when you finally get to drinking this one. I will be curious to see how this turns out. This sounds like a pretty intense beer.
