I've got a brown ale recipe that calls for 1 pound of Crystal 60L. I have on hand half a pound of crystal 60L (and it's 9 months old). I also have some Crystal 120, some Carapils, some special B and some biscuit malt.

Any ideas for replacing that 1 pound of Crystal 60 (or half pound) or should I just go buy a new pound?

The problem is you don't really have any reasonable replacements. Crystal 120L is very dark and raisiny, and so is special B. Carapils isn't dark enough to provide any of the crystal flavor. Biscuit malt is totally different.

Depending on what the rest of the recipe looks like, though, you may be able to leave it out or sub something else.

For the $1 for a new pound, go get a fresh one and use the old leftovers in cookies.
