I've made a couple of kits now with good results, and this last kit I fermented in a temp controlled freezer at 70F (hoping to have really nice results).

I don't know if it's just the way the wine is supposed to taste, but my "blink" response is wow, this tastes like grape juice and wine at the same time.

It's SG is where it's supposed to be, and it's definitely got alcohol, VERY smooth.

Is a South African Shiraz supposed to taste grapey? Maybe it's just bold flavors?

The kit was a Selections Estate.

I'm not much of a wine guy, but how long have you been aging it so far? My mother is a wine maker and she ages shiraz for up to a year before pronouncing judgment.
 
ya, it's only been about 3 months. i'm thinking as well that it needs time, especially since it's aging at 70F instead of my usual 80F.
