So I am making a test batch of my first common cider attempt. I took Louisburg cider (local cider mill) and inoculated it with Wyeast 4783 Rudesheimer yeast. Has anyone used Rudesheimer? How did it turn out? My O.G. was at 1.050 @ 60 F. I am hoping to get a F.G. of 1.000

You will get that, more likely in the range of 0.995 to 0.990. Rudesheimer has an alcohol tolerance of 14% ABV. Right now I'd say your cider has the potential of 6.65% - 8% ABV.
