I'm planning to use gypsum in my next brew. I typically boil about 2-3 gallons (all the pot space I have right now) and then add enough water to get 5 gallons after transferring the wort to the primary. Should I add the gypsum to 5 gallons in the fermenter and take out 2 to boil or just add it all to the boil volume? Any suggestions are greatly appreciated.

It hardens the water. Some beers require hard water, some soft.

That's why some people get their water, if you use tap water, analyzed. This way if your water is already hard you don't need to add more hardness if your recipe doesn't need it.

BTW, gypsum is the same as dry wall, which still is called gypsum board, sometimes.
