If they have tons of fruit bits, I might wait just a little bit longer. Usually, it's about 5 days.

I'm not a fan of plastic water bottles. #7 can release BPA, and I'd be concerned about oxygen permeability. I have many one gallon jugs, though, that are glass. Carlo Rossi wine jugs are perfect, and a #6 stopper and airlock fit perfectly.
