i'm going to do a belgian white(wit), just for fun i want to add orange blossom honey the end of the boil. i have three pounds, any suggestions on how much to add and how any particular amount will affect the flavor etc. of the beer? maybe add half at the end of the boil and half at the transfer to the secondary....or use some in the priming solution, or all three! i also have a belgian pilsner+/-, i'm going to add apple and pear juice to.:)
 
I would add it after the wort has started cooling, when it gets to about 160 degrees. Honey loses it's aroma quickly when it's boiled and becomes little more than sugar for the yeasties.
 
excellent!!!! i knew i could count on my beer friends for guidance. thanks very much. i'm going to boil next weekend... unless it rains tomorrow! i'll let y'all know how it turns out.
