And let it sit for ~40 days, so just about 6 weeks.

Well, it looks amazing, and if it tastes anywhere close to what it looks like...whew! Thanks for the share, and congrats on the bronze.

Can you tell me what your OG was on this?

Oops, OG was 1.114.

Ok thanks! I actually started this one day before yesterday and my OG was 1.110, close enough for me. This is my first melomel, and I too was surprised at how quickly and vigorously the 71b took off...especially after the traditional mead I made with the same yeast to top these off was so sluggish even with the SNA. This baby is going to town!

A day later, and I'm already down to 1.050...this is going to be one fast ferment.
