Just realized I don't have the recommended yeast on hand for two upcoming brews. But I do have a few choices on hand.

Looking to brew
- Stone Russian Imperial Stout
- Scottish/80

Yeast options:
- Wyeast British 1098
- Wyeast Irish 1084
- Nottingham
- SafAle-04

Any strong opinions? Does it even make much difference?

If I had to pick from those four, I'd pick the Notty for the RIS due to it high attenuation over the S-04 (I hate 1098 for the record... WAY too fruity).

I'd also go with 1084 for the 80/-, but be sure to ferment it below 64*. It gets real estery above that.

i'd go with 1084 in your scottish and s04 in the RIS - but i'm a fermentis apologist... i happen to like their yeasts (except s33)...

Great! Thanks for the input. I love this place.

So I created a starter of the 1084 last night. Now if only I could get my crappy DIY stir plate to work! And I may have to rethink where I put the fermenter, this spring has been unseasonably warm for us. 64 F... I'll take it as a challenge.
