Question on sediment.

If after putting clearing agents in the wine and within 3 days 1 inch of sediment fell why wouldnt you want to rack that off of the thicker part of the lees so it wouldnt set on it for another 12 days or so? Then rack again to clear before bottling. Getting rid of the mass of it early on. All info and opinions appreciated.

You can, but once you have an inch of sediment, why not wait and let all of the sediment fall so you only rack once? 12 days on the sediment won't hurt the wine, but excess racking can.

Wine Expert kits want you to stir the lees back into the wine, then after clearing agent is added it sets on a lot, of what it seems like, you would want out. Was just thinking cleaner wine would be better tasting wine. ???
 
The wine draws some of its flavor off of the lees. I would just follow the kit and I'm sure it will be fine.
