First time barley wine

Ok so I want to do my first barley wine. After reading a bit, this is what by tentative plans are:

1. Make a basic pale ale. Will use the yeast cake from this.
1a.This pale ale will be a simple recipe;
4.5# Light DME
1oz Apollo hops(.5oz @60min, .5oz @20 min)
Wyeast 1764(pacman)

2. Brew BW after PA has been in primary for 2 weeks
2a. Simple BW recipe;
13# Light DME
.5# crystal 40
2# dextrose
1oz Apollo hops(.5@60, .5@45)
2oz cascade hops(.5@45, 1@30, .5@15min)
pitch onto yeast cake from PA

Im using ingredients that are not in my software, so i'm pretty sure im probably messing something up somewhere. Critique this please.
 
oh, i should have put in first post: 1 lb dextrose @ boil and 1 lb dex fed into fermenter@ 1/4 lb increments. would that be ok or should i still just use 1 lb?
 
Barely wine ... 14%... serious beer.

Is this your first one? I'd suggest toning things down to like say 11# and 1# of malt/dextrose respectively. This will bring you in the 10.5-11% range and will age a little quicker (Still at least 4-5 months) and is just easier to manage...

Something in the range of 14-15% I can't even see that being drinkable for a year or two...
 
more hops. lots more hops. my barley wine recipe has 110 IBU. 9.5 oz of hops. the IBU range for the style is 50-100. also i'd just add the 1# of dextrose to the end of the boil. just let it go for 2-3 weeks. then measure gravity. if its still a little high, i guess you could add dextrose to stimulate more fermentation, but i wouldnt.

Yes first barley wine. First beer over 10%. new recipe:

10# light dme
1# dextrose

2oz apollo(1oz@60, 1oz@45)
3oz cascade(1oz@45, 1oz@30, 1oz@15)
Does this look a little better? My software doesn't have pacman yeast or apollo hops so im not really sure what the IBU's will be and what my F.G. should look like.
 
looks better. I use Beersmith and I love it but I cant find Apollo hops either. wait a bit and maybe a few more people will chime in with their thoughts
