Sorry for the potentially idiotic question but I'm curious if I could use a party pig as a regular bottle, i.e. prime the beer like usual, rack it in and let it self-carbonate, then just tip the pig when I want to pour out the beer. Or is the carbonation needed to hold the bubbles in solution so the beer doesn't go flat as it gets drunk?

It will work, but towards the end, the beer will be flat. The pressure bladder prevents the CO2 from coming out of the beer.
