I just finished an Ommegang 10th anniversary Chocolate Stout. It was wonderful! I have another I'm saving for a special occasion later. The bottle comes corked with a champagne cork and the wire cage. I was wondering how many of you save bottles like these and actually use them with your brews and cork them again.

Who keeps them? How many do you keep around?
 
Many (though not all) Belgian-style bottles use a smaller cork (25.5x44mm vs. 28.5x47mm for champagne corks).

Yes, you need to use wire cages.
 
Do you have a wife that drinks champagne or any sparkling wine? I've been saving those bottles for use in highly carbed belgians. I am waiting on a capping bell for my bench capper since I don't want to spend the $$ on a corker and deal with caging them all. I figure the 29mm caps will do me just fine.
