Well, I hadn't planned on doing my first decoction mash this weekend but I purchased Weyermann Floor Malted Bohemian Pilsner Malt for a Belgian Pale Ale and based on what I've read, a decoction will provide the best results. (Weyermann says it's a "slightly undermodified malt".)
My recipe also calls for 8% CaraMunich III (about 60 L) and 3% Biscuit. I'm assuming that I would add the CaraMunich at the Conversion Rest (156F) but haven't found anything about when to add the Biscuit. I'm thinking also at the Conversion Rest but would appreciate any thoughts others have on that. Thanks
