So I brewed a pale ale a little over a month ago and when it was ready we drank some bottles over the first week and it tasted pretty much fine and now it is starting to develop this kind of tart aftertaste. Does anyone know why this is happening all of the sudden and how I can avoid this next time?

Is there a reason it would develop now after being good for a couple weeks?

An off flavor that gets progressively worse could be the sign of contamination. Check your cleaning/sanitation practices and replace anything plastic (bucket, racking cane, transfer tubing) if you're really worried about it.

If the off flavor is getting worse, it's either a small infection, of the operation of staling. Since you say a "tart" flavor, I'd guess infection. Replace your plastic.
