I want to take home some of my brews to drink for thanksgiving. the problem is I wont be home until Tuesday. I usually like to give my brews atleast 3 days cold conditioning. Would it be OK to put my beer in the fridge now, then bring them out on Monday to pack for Tuesday? or should I just wait to put them in a fridge Tuesday evening for consumption on Thursday?

Have they already had 3 weeks of bottle conditioning?

If the have already conditioned for awhile I would throw them in now.
If they were bottled less than a month from now I would wait and put them in Tuesday
IMHO

Throw them in now. That should help make sure that the sediment layer is pretty compact before you travel. Once you get to where you're going, throw them back in the fridge until consumption. Most commercial beers aren't kept in the cold from bottling time all the way to your house, so you will be just fine.
