I picked up a kitted brew for a De Kloof Browerij Berliner Weisse and idiotically overlooked the rather vague recipe notes regarding mash schedule.
All that is said is Triple decoction with mash hops.
Per your wiki, a typical triple decoction would look like;
Acid - 97*f @ 92 min.
Protein - 122*F @ 84 min.
Sacchar - 149*F @ 60 min.
Mash out - 167*F @ 10 min.
that is 4 hours +.
My kit consists of 12lbs Weyerman Pils, 8lbs Weyerman Pale Wheat, 2 Oz Mash hop Hallertauer pellet, and White Labs European and WL Lacto delbrueckii.
I do not plan to decoct but will follow the steps unless you think the timeline is unecessary.
Any suggestions?
