Cool. That's a little steep for two pieces of wood. Also, it says 6 weeks to get the cedar in the beer, but if they are the same spirals that CCB uses, one week will do it. I was told by the head brewer at CCB that they do 1 week.


One week is consistent with the instructions in Zymurgy.

I just made a batch of this. It was actually a Pliny the Elder clone, and I put some old spanish cedar into one of the kegs. Tastes just like the real thing. I should know, I drank two of the 4-packs of the Humidor-series IPA a couple weeks ago.

I had the spanish cedar sitting in my garage for about 2 years. I just sanded it a bit, cut the plank into a bunch of strips, and tossed it into the keg. I meant to put it in the fermentor, but forgot. Man, the beer foamed a ton (I closed the keg lid just as the foam was coming out.
